Raw peanut butter cups

 These are super quick and easy to make for when you need a healthy chocolate fix! 


INGREDIENTS

  • 1⁄2 cup coconut oil

  • 1⁄2 cup raw cacao or coco powder

  • 2 tablespoons honey, brown rice syrup and maple syrup

  • 3.5 tablespoons peanut butter or almond butter

  • cacao nibs *optional

  • 7 cupcake/ muffin liners or a silicone muffin mould


INSTRUCTIONS

  1. Melt coconut oil in a pan on the stove. Remove from heat, stir in cacao powder and sweetener.

  2. Place a tablespoon of liquid chocolate in the bottom of the liner. Repeat to fill 7 cupcake liners or the base of 7 silicone moulds with chocolate. Then place them in the freezer or fridge to harden for 5-10 minutes.

  3. Once bottoms are hard, place 1/2 tablespoon of peanut butter or almond butter and spread it over the hardened chocolate, but not completely to the edges. You want to leave space for the chocolate top to stick to the chocolate base, otherwise you get a sandwich.

  4. Pour 1-1.5 tablespoons of melted chocolate over the nut butter to cover it completely, until all the chocolate has been used up. Sprinkle with cacao nibs-optional

  5. Place back in fridge, freezer to harden completely, about 10 minutes in freezer. Enjoy!

  6. Store in fridge or freezer.
